Sundried Tomato and Garlic Pasta

This is the perfect dish to serve for a casual summer lunch with friends or family. It is a simple, and easy meal to whip up when you are pressed for time.

What you will need

  • ¼ kg Angel hair pasta
  • 1 tsp Molinera Pomace Olive Oil
  • 2 cloves Fresh garlic
  • 6tbsp Molinera Extra Virgin Olive Oil
  • ¼ cup Chopped onions
  • 1 tbsp Molinera Red Wine Vinegar
  • 2 tsp Salt
  • 2 tsp Molinera Capers
  • 5 pcs Molinera Sundried Tomatoes (cut into strips)
  • 1 cup Fresh Basil Leaves
  • 1 cup Grated Parmesan cheese

 

Instructions

  1. Boil pasta in salted water with a teaspoon of Pomace olive oil (to prevent noodles from sticking together. Cook al dente, then drain.
  2. In a skillet, cook garlic in extra virgin olive oil until lightly browned. Add the chopped onions.
  3. Stir in the red wine vinegar. Season with salt and pepper.
  4. Add capers and sundried tomatoes.
  5. Remove pan from heat and add the cooked pasta. Toss with cooking tongs to coat the noodles with the sauce.
  6. Transfer to a platter and garnish the dish with leftover sundried tomatoes, basil leaves and grated Parmesan cheese.
